BLUEBERRY PANCAKES

Ingredients
¼
cup
brown rice flour
2
Tbs
ground flax seeds
2
Tbs
apple sauce
2
Tbs
almond flour
½
teaspoon
baking powder
pinch
of salt
1
egg or egg substitute
1
Tbs
coconut oil
1
Tbs
honey
1
teaspoon
cinnamon
loads of blueberries
about ¼ water or milk sub of choice- depends how thick you like you P-Cakes and how long you let the batter sit- the flax will absorb water as it sits
Instructions
Mix dry ingredients together in one bowl
Mix wet ingredients in a second bowl
Combine together and then stir in blueberries
Heat a pan to high heat, melt some coconut oil in the pan
Reduce heat to low/medium
Spoon small dollops of batter in the pan
Wait until you see the bubbles and then flip.
