A lighter version of the classic Waldorf Salad– roasted walnuts, Wasabi Peas, currants, apples and fresh veggies are tossed with non-fat Greek Yogurt, honey and Dijon-style mustard. Makes a great side salad. Best as a topping in a pita with falafel. I decided to make this dish on a beautiful autumn afternoon this week, with apples galore at WFM and a variety of Gala and Granny Smith on sale.
A little crunch from the walnuts. A lot of zip from the Wasabi Peas. And so much natural goodness with the apples, cabbage, carrots and celery!

Frequently Asked Questions
What is Waldorf Salad dressing made of?
The classic Waldorf salad is dressed simply with mayonnaise, salt, and pepper, which can be a little one-dimensional and heavy. We used a combo of Greek yoghurt and mayo to add some extra sharpness. The Greek yoghurt adds acidity to the salad while also making it lighter and easier to eat.
Why do people like Waldorf Salad?
The Waldorf salad is a classic for a reason, with its sweetness and crispness. Its combination of apples, celery, walnuts, and lettuce, with just the perfect amount of mayo and lemon, and perhaps some grapes, has a lot to recommend it. The Waldorf salad appears to be a salad mainstay for most of us, something that has always been there.
How will you prevent the green apples in Waldorf Salad from turning brown?
Toss the apple slices with about a teaspoon of lemon juice. In addition, as soon as you put the salad together, the apple surfaces are coated with mayonnaise or another dressing, which protects them from the elements.
