Spicy Chickpea Salad with Basmati Rice

Beans are one of the most nutritious and satisfying foods – rich in complex carbohydrates, low-fat protein, minerals, calcium, fiber, and loaded with antioxidants. This dish features my favorite bean- the chickpea- in a tasty, quick, and easy salad with sweet cherry tomatoes, fresh herbs, lemon juice and lots of flavorful Indian spices. Serve over some nutty Basmati white rice and enjoy!

Spicy Chickpea Salad

Ingredients

1 onion, diced small
2 cups chickpeas, soaked and drained
2 cups sweet cherry tomatoes, halved
2 tablespoons canola oil (or coconut oil)
4 cloves garlic, minced
1/2 bunch cilantro, minced
1/2 bunch mint
2 to 3 tablespoons fresh lemon juice
1 teaspoon turmeric
1 large pinch cayenne pepper
1/2 teaspoon cumin, toasted
1/2 teaspoon cinnamon
sea salt to taste

Directions
1. Cook the chickpeas until soft. Drain.
2. Sweat the garlic and onions with the spices until the the onions are soft and translucent.
3. Add the tomatoes and salt.
4. Add the chickpeas, herbs and lemon juice.
5. Serve over Basmati rice.
