    Ingredients

    • 1 large sweet potato
    • 2 tablespoons extra virgin olive oil
    • Salt and freshly ground black pepper
    • 1 tablespoon of honey

    Directions

    • Preheat the oven to 400 degrees F, 
    • Bring a small pot of water to a boil and salt it generously (the water should taste like tears- happy ones!)
    • Wash the sweet potato and peel it, removing all of the brown spots.
    •   Chop into 1-inch pieces and add them to the boiling water. Cook for 10 minutes.
    • Remove the potatoes from the boiling water with a slotted spoon, 
    • Place them on a well-oiled baking sheet.
    • Season with salt, pepper and a drizzle of honey. 
    • Bake in the oven for 20 to 25 minutes, or until crispy on the outside.
