Pan Con Tomato

Pan con tomato (also known as Mexican sweet bread) is a traditional Mexican dish that is made with masa, tomatoes, and salsa. It is a popular snack or side dish which is often eaten for breakfast. In Mexico, it is considered a comfort food to be eaten when you are feeling sad or down.

Pan con tomato is one of the simplest, tastiest and cheap food you can get from a street vendor. Although it’s a staple in many Latin American countries, it was actually invented in Barcelona in 1905. To make this meal more accessible to all, we’re sharing our favorite recipe for pan con tomato using two baking pans.

This is a classic that can be eaten as is, or can be embellished with any number of toppings. But a good quality country bread, such as Pan Pugliese, ripe plum tomatoes, and fruity olive oil are essential. INGREDIENTS:

Baguette, Cut in 3/4 inch pieces4 Ripe Plum Tomatoes76 grams Extra Virgin Olive Oil, (1/3 cup)Salt and Pepper2 Garlic Cloves,  Peeled

DIRECTIONS:

1. Halve the tomatoes through the middle and grate the flesh into a bowl,  Discard the skin.


2. Whisk in the olive oil and season to taste.

3. Grill or oven-toast the bread, rub with optional garlic, and then spoon on the tomato dressing and spread it over the bread.

4. Pan con tomate may be served on its own or with a Spanish Cheese, such as Manchego.
