People often call mandel bread "Jewish biscotti", but there is no comparison. Unlike biscotti-- the tall, thin, dry cookies, often dunked in chocolate and displayed on the check-out counter at Starbucks, mandel bread are golden brown on the outside, moist in the center, dusted with cinnamon and powdered sugar, dense but not heavy or rich in the least, and packed full with chopped walnuts and raisins (or chocolate chips), It's the perfect cookie-- hot out of the oven or straight from the freezer. My mom may just have to open our own mandel bread shop.

Frequently Asked Questions
What is Mandel bread made of?
Mandel bread is a hearty, corned beef-based loaf that originated in the Jewish community. It is made from two main ingredients: mandeln (almond cookie) and matzoh ball soup. The almond cookie helps to bind the dough while the matzoh ball soup provides moisture and nutrients.
The final product resembles a braided sandwich with multicolored strands, and it is often served as part of Passover celebrations or Sabbath meals. Mandel bread can be enjoyed plain or toasted and seasoned with garlic, salt, onion powder, pepper flakes, poppy seeds, or raisins.
What is the difference between biscotti and mandel bread?
Mandel bread is crisp like biscotti. But because it contains more fat than biscotti, the finished biscuit is slightly richer and less dry. It is excellent on its own; you don't even need to dip it in coffee or tea to enjoy it.
