    Honey Goat Cheese Stuffed Dates

    I usually admire Martha Stewart’s recipes from a distance, since they look too difficult to make, but I recently found a pretty simple appetizer idea from her web marthastewart for Honey Goat Cheese Stuffed Dates. I added my own jazz with some leftover toasted almonds and fresh from the farmer’s market wildflower honey. Rich and sweet, this recipe works as an elegant appetizer with some good wine or as a dessert party dish. Enjoy!

    Honey Goat Cheese Stuffed Dates

    Ingredients

    • 1 lb fresh dates are
    • 2 to 3 ounces creamy goat cheese
    • 11/2 teaspoons honey
    • 11/2 tablespoons crushed, roasted almonds
    • sea salt

    Directions

    • 1. Combine the goat cheese and honey in a small bowl and stir with a spoon until the mixture is smooth and creamy.
    • 2. Slice each date lengthwise and remove the pit. Fill each date with a small amount of the goat cheese mixture (a little goes a long way). Just before serving, sprinkle each date with sea salt and some of the crushed almonds.
