It is day 2 of Green Week here at Making Love In The Kitchen and if you are reading this blog, chance are good that you eat salad. Maybe not every day, but I would go so far as to say that at least once if not five times a week. Unless we grow your own greens, in our yard, I doubt we actually give much thought to who actually did grow our greens, or who sprouted that first seedling, transplanted the seedling into the earth, weeded the ground around it, watched it grow, woke up at dawn to harvest it, washed it in tubs of cold water, allowed it to dry gently, weighed it, packed it up and transported it to our favourite store or market.
None of this really occurred to me until that person doing it was me! Now, don’t get me wrong, I have thought about how my food comes from the earth, it is an important part of my conscious eating practice. I never actually took the time to think about all the energy involved. It truly is a special connection we have to the earth through our greens.

Honey cider dressing is a perfect topping for salads, burgers, and sandwiches. It's also great as a marinade for meat or fish. Simply mix equal parts honey and cider vinegar, then whisk in salt and pepper to taste. If you want a spicier dressing, add garlic, chili powder, or cumin to the mix. Enjoy!
CranApple Green Salad
INGREDIENTS
- 2 cups (approx) Arugula1 cup (approx) Spinach
- 2 cups (approx) Mixed Baby Greens
- ½ cup Fennel, thinly sliced
- 1 Apple sliced in shoestring strips (like shoe string fries)
- ¼ cup Dried cranberries
- ¼ cup Toasted pumpkin seeds
DIRECTIONS
- Toss ingredients together in large salad bowl. Add more greens if necessary.

Honey Cider Dressing
- ½ cup olive or flax oil
- ¼ cup raw honey
- ¼ cup apple cider vinegar or lemon juice
- 2 tsp mustard
- salt/pepper to taste.
DIRECTIONS
- Put all ingredients into a jar, shake.
- Pour dressing on to salad just prior to serving.
