Frequently Asked Questions
What are eggs for in cupcakes?
Eggs can give baked goods structure, leavening, richness, color, and flavor in addition to their nutritional content. The ratio of eggs and flour, which contribute strength, and sugar and fat, which add tenderness, determines the height and texture of baked items.
Are eggs used in cupcakes?
Eggs are essential ingredients in a variety of baked products, from cookies and cakes to meringues and pastry cream. They give batters structure and stability, thicken and emulsify sauces and custards, add moisture to cakes and other baked goods, and even work as a glue or glaze.
How do eggs effect cake?
When eggs are beaten, they can act as a leavening agent by introducing air to the cake batter. Eggs also include a range of proteins that help construct the structure of a cake. However, if you overdo it with the eggs, your cake may come out dense, spongy, or rubbery.
