    • 1 package carrot cake mix (pretty much any cake mix will do)
    • about ¾ cup zero calorie Steaz Orange Soda
    • 2 overripe bananas, mashed
    • 1 teaspoon cinnamon, optional
    • ¼ teaspoon nutmeg, optional
    • Cream Cheese Frosting:
    • 4 ounces low fat cream cheese (Neufchatel)
    • ¾ cup confectioners’ sugar, sifted
    • ½ teaspoon finely grated lemon zest

    DIRECTIONS:

    • Preheat oven to 350 degrees F.
    • Grease a baking pan with nonstick cooking spray.
    • Empty the carrot cake mix into a large mixing bowl.
    • Add the soda and mashed bananas and stir just until the mixture is evenly moist.
    • Pour the batter into the pan.
    • Bake for 35 – 40 minutes (may take longer). Use the toothpick test: bake until toothpick inserted comes out clean.
    • Cool, loosen edges, and sprinkle with cinnamon, nutmeg and powdered sugar (optional).
    • For the frosting, use an electric mixer. Beat together the cream cheese, confectioners’ sugar and lemon zest until creamy. Frost the cake and sprinkle with the remaining cinnamon and nutmeg. The cake should be stored in the refrigerator until ready to serve.
