    Almond Milk Recipe

    Nut milk isn't a new drink, but its popularity is. Almond milk recipe has taken off as an alternative to not only cow's milk, but also the more expensive alternatives. If you're looking to cut the cost of your grocery bill, this is the drink for you.

    My newfound love of homemade almond milk is due to peer pressure. For months, two of my friends have been making it, and I've been subjected to their exclamation-filled chats about its great creaminess, mellow milky flavour, and overall superiority to store-bought. I eventually got to try a glass for myself a few weeks ago, and peer pressure clearly triumphs in this situation. This stuff is fantastic. Excellent work. And now that they've shown me how simple it is to make at home, I'm not sure I'll ever drink store-bought again.

    Yes, this almond milk recipe is a healthy choice if you want to avoid dairy, but if you're opting for soy milk or rice milk, it might be a healthy choice for very different reasons. But it's still a good choice.

    Homemade almond milk, in my opinion, tastes MUCH BETTER than store-bought almond milk. Once you try it, I think you'll agree that homemade is the best! In fact, once you taste how amazing it tastes and how easy it is to prepare, you won't be able to go back to store-bought.

    As an added treat, you can create Almond Pulp Hummus or Almond Pulp Brownies with the leftover pulp. Win-win situation!

    Here’s a new recipe for you to try. It's healthy, filling, and totally dairy-free. It's made with Almond milk, fresh vegetables, and low-calorie spices.

    Ingredients

    • ½ cup almonds (soaked overnight)
    • 1 cup + 1 cup of water
    • 1 Tbs honey or 2-3 pitted dates or 1 teaspoon vanilla extract (optional).

    Directions

    1. Soak almonds overnight in 1 cup of water.
    2. Discard the soaking water and rinse
    3. Pour almonds, 1 cup of water and sweetener of choice into a blender and blend until smooth
    4. Lay a strainer over a bowl and pour nut mixture through strainer. Press micture with the back of a spoon until milk has drained through
    5. Put mixture back in the blender with additional cup of water, blend until smooth and repeat step 4.
    6. Pour milk into jar and store in the fridge. You may wish to add more water depending on the consistency you enjoy.
      Note: Milk will settle in the fridge. Shake before using. And save the leftover nut mixture. This can be dehydrated in the oven to use in place of bread crumbs or in my Ultimate Healthy Cookie  in place of the almond meal.

    What are the advantages of almond milk over skim milk or another form of milk?

    • Almond milk is dairy-free, which means it doesn't contain lactose or casein, which can cause digestive problems in up to 75% of the world's population.
    • Almond milk can offer up to 6 grammes of protein per serving if all of the nourishment from the almonds is distributed into the homemade milk. (Approximately 1 ounce of almonds.)
    • 1 cup of homemade almond milk may provide up to 8% of your daily necessary calcium and 6% of your daily iron needs, thanks to the nutrient-dense almonds.
