Cilantro Chutney Recipe

Makes 1 Cup

INGREDIENTS:

1 bunch fresh cilantro
1 jalepeno pepper, stems and and seeds removed
1/4 cup roasted peanuts (we used about 1/2 cup)
1/4 apple, cored, peeled, and cubed
1/2 cup plain, whole-milk yogurt
Juice of one lemon or lime
1/2 teaspoon kosher salt

DIRECTIONS:

1. Rinse the cilantro under cold running water. Spin dry in a salad spinner or blot dry with paper towels.
2. In a blender, puree the pepper, peanuts, apple, yogurt, lemon juice and salt, until smooth.
3. With the blender running, add the cilantro, a little bit at a time, until the mixture is a smooth blend, before adding the next handful of cilantro. Continue until you have used all of the cilantro. Season with more salt, as need.
