Keep your eye on the game, and let the grill do the work for you, with this inexpensive (under $ 10 dollars), smokin’ hot salsa recipe. Packed with sweet, slightly charred corn, fresh cilantro, roasted jalapeños, and black beans, this healthy snack is perfect sports party munching.
INGREDIENTS:
1 can (365 Everyday Value) black beans, drained and rinsed
1 can 365 Everyday Value Corn, drained and rinsed
1 yellow pepper, sliced in half, seeds discarded
2 limes, sliced in half
2 plum tomatoes, chopped
1/2 cup fresh cilantro, chopped (had on hand)
1 small onion, chopped
2 jalapeño chiles
1 1/2 teaspoons sea salt
1 teaspoon sugar in the raw
freshly ground black pepper
DIRECTIONS:
1. Preheat a grill on medium-high.
2. When the grill is hot, arrange the sliced yellow pepper, sliced limes, and chiles on a piece of foil that is brushed with extra virgin olive oil. Sprinkle with salt and pepper. Cover the grill and cook for about 5 minutes, until the peppers show char marks. Remove from the grill. Set aside.
3. Spoon the corn onto a separate sheet of foil. Drizzle the corn with olive oil and sprinkle with salt, pepper and sugar. Fold the sides of the foil up to form a packet. Cover the grill and cook for about 5 – 10 minutes, until the corn picks up color without blackening. Remove from the grill.
4. Roughly chop the grilled yellow pepper and chiles.
5. In a large bowl, mix the black beans, chopped tomato and onion, the chopped grilled yellow peppers and chiles, roasted corn, and cilantro. Squeeze the grilled limes over the mixture. Season with salt, black pepper, and sugar in the raw.
